Byron Burroughs, owner of Proof Brewing Co. in Tallahassee, FL led a tour of his brewing operation for students in Studio III in support of the design development efforts for their office project. This semester’s workplace project centers on solutions for approximately 10,000sf of corporate office space that functions as the business arm of a brewing or distilling operation. Each client is located in a multi-story building adjacent to the Cumberland River in Nashville, TN. Byron took students around the fermentation vats, brew kettles, beer tanks, and canning/racking areas. Since his company does not have office space in the truest sense (one room off of the brewing floor), Byron went through several “if I had a large firm with 10,000sf, I would…” scenarios based on student questions. As a result, a number of student designs were re-programmed to fit other alternatives to their client’s ‘reason for being’ as a brewing or distilling company.
